For the casserole:

  • 2 cups cooked chicken (you can use rotisserie chicken or cook and shred chicken breasts/thighs)
  • 2 cups cooked white rice
  • 2 cups broccoli florets (steamed or blanched until tender)
  • 2 cups shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional, for garnish)


  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Chicken: If you haven’t already, cook and shred your chicken. Season it with a pinch of salt and pepper for added flavor.
  3. Cook the Rice: Prepare the white rice according to the package instructions, and set it aside.
  4. Steam the Broccoli: Steam or blanch the broccoli florets until they are tender but still vibrant green. This should take about 3-4 minutes. Once done, drain them and set them aside.
