CREAM CHEESE CHICKEN ENCHILADAS

 

Cream Cheese Chicken Enchiladas are a delicious and creamy twist on traditional enchiladas. Here’s a step-by-step recipe to guide you through the preparation process:

Ingredients:

For the Filling:

  • 2 cups cooked and shredded chicken (rotisserie chicken works well)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese (or a blend of your favorite cheeses)
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

For the Enchilada Assembly:

  • 8-10 flour tortillas (8-inch size)
  • 1 cup enchilada sauce (red or green, store-bought or homemade)
  • 1 cup shredded cheddar cheese (for topping)
  • Chopped green onions, chopped fresh cilantro, and sliced jalapeños for garnish (optional)

Instructions:

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the shredded chicken, softened cream cheese, 1 cup shredded cheddar cheese, sour cream, chopped cilantro, ground cumin, chili powder, salt, and pepper. Mix until well combined.
  • Warm the flour tortillas for a few seconds in the microwave or on a skillet to make them pliable.
  • Place a generous spoonful of the chicken and cream cheese mixture onto the center of each tortilla. Roll the tortilla tightly around the filling and place seam-side down in a greased baking dish.
  • Pour the enchilada sauce evenly over the rolled tortillas.

  • Sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the enchiladas.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for about 20 minutes.
  • Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the enchiladas are heated through.
  • Once done, remove from the oven and let the enchiladas rest for a few minutes before serving.
  • Garnish with chopped green onions, chopped cilantro, and sliced jalapeños, if desired.
  • Serve the Cream Cheese Chicken Enchiladas with additional sour cream, salsa, or guacamole on the side.
