Homemade Pineapple Soft Ice Cream

Homemade Pineapple Soft Ice Cream Recipe:

Ingredients:

  • 2 cups fresh or canned pineapple chunks (frozen)
  • 2 cups heavy cream (whipping cream)
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Prepare the Pineapple:
    • If you are using fresh pineapple, peel and core it, then cut it into small chunks. Freeze the pineapple chunks in a single layer on a baking sheet lined with parchment paper or in a freezer-safe bag for at least 2-3 hours, or until frozen. If using canned pineapple, drain the juice and freeze the chunks.
  2. Chill the Mixing Bowl and Whisk:
    • Place the mixing bowl and whisk attachment of your electric mixer in the freezer for about 15-30 minutes. This step helps whip the cream faster and yields better results.
  3. Make the Ice Cream Base:
    • In a blender or food processor, blend the frozen pineapple chunks until smooth and creamy. You may need to scrape down the sides of the blender a few times during the process.
    • In a separate bowl, whisk together the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt until the sugar is dissolved.
    • Add the blended pineapple to the cream mixture and whisk until well combined.

  1. Churn the Ice Cream:
    • Take the chilled mixing bowl and whisk attachment out of the freezer. Pour the ice cream mixture into the chilled bowl.
    • Using an electric mixer on medium speed, whisk the ice cream mixture for about 10-15 minutes or until it thickens and becomes creamy. The exact time may vary depending on your mixer and the temperature of your ingredients.
  2. Soften and Serve:
    • Once the ice cream reaches the desired consistency (soft and creamy), transfer it to an airtight container.
    • You can serve the soft ice cream immediately as a soft-serve treat or transfer it to the freezer for a couple more hours to firm up for a scoopable ice cream.
  3. Enjoy:
    • Serve the homemade pineapple soft ice cream in bowls or cones and enjoy the refreshing tropical flavor!

Notes:

  • If you don’t have an electric mixer, you can use a hand whisk or a stand mixer with a whisk attachment.
  • For an even creamier texture, you can add 1-2 tablespoons of cream cheese or Greek yogurt to the ice cream base.
  • Feel free to add some coconut flakes or chopped nuts for additional texture and flavor.
