Strawberry bombs are delicious and refreshing treats that are perfect for summer or any time you want a burst of fruity goodness. Below is a simple recipe for making strawberry bombs:

Ingredients:

  • 2 cups fresh strawberries (washed and hulled)
  • 1 cup strawberry ice cream or frozen yogurt
  • 1 tablespoon honey or maple syrup (adjust to taste)
  • 1 tablespoon lemon juice
  • 1/2 cup crushed graham crackers or digestive biscuits
  • 1/4 cup shredded coconut (optional, for coating)
  • Small paper cupcake liners or silicone molds

Instructions:

  1. Prepare the strawberries: Wash the strawberries thoroughly and remove the stems and hulls. Chop the strawberries into small pieces.
  2. Blend the ingredients: In a blender or food processor, combine the chopped strawberries, strawberry ice cream or frozen yogurt, honey or maple syrup, and lemon juice. Blend until you get a smooth mixture.
  3. Chill the mixture: Transfer the blended mixture to a bowl and place it in the refrigerator for about 30 minutes to an hour to firm up slightly.
  4. Form the strawberry bombs: While the mixture is chilling, prepare the crushed graham crackers or digestive biscuits and the shredded coconut (if using). Line a tray with parchment paper or use a silicone mold for easy removal.
  5. Once the mixture has firmed up, take it out of the refrigerator. Using your hands or a small ice cream scoop, form small balls with the strawberry mixture.

  1. Coat the strawberry bombs: Roll each ball in the crushed graham crackers or digestive biscuits until evenly coated. For added texture and flavor, you can also roll them in shredded coconut.
  2. Set the bombs: Place the coated strawberry bombs on the prepared tray or in the silicone molds and return them to the refrigerator to chill for at least 1-2 hours or until they are firm and ready to serve.
  3. Serve and enjoy: Once the strawberry bombs are thoroughly chilled and firm, you can serve them on a platter or in individual cupcake liners. These refreshing treats are best enjoyed immediately, but you can store any leftovers in an airtight container in the refrigerator for a day or two.
