No-Bake Chocolate Oatmeal Bar


No-Bake Chocolate Oatmeal Bars are a delicious and easy-to-make treat. Here’s a simple recipe to prepare them:


  • 1 cup (2 sticks) unsalted butter
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract

  • 3 cups quick-cooking oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter (optional, for added richness)
  • A pinch of salt (optional, to enhance flavor)


  • Prepare the Pan: Grease a 9×9 inch (or similar-sized) square baking dish with butter or line it with parchment paper. This will make it easier to remove the bars once they’ve set.
  • Melt the Butter: In a large saucepan, melt the butter over medium heat.
  • Add Sugar and Vanilla: Once the butter is melted, stir in the packed brown sugar and vanilla extract. Mix well until the sugar dissolves completely.
  • Oats and Salt: Add the quick-cooking oats to the butter-sugar mixture. If you like, you can also add a pinch of salt at this stage to enhance the flavors.
  • Combine the Mixture: Stir everything together until the oats are well coated with the butter-sugar mixture. Keep stirring for a few minutes to ensure the oats are fully cooked.

  • Chocolate Layer: Take half of the oat mixture and press it firmly into the bottom of the prepared baking dish, creating an even layer.
  • Melt Chocolate and Peanut Butter (Optional): In a microwave-safe bowl or a double boiler, melt the chocolate chips. If you’re using peanut butter, you can melt it together with the chocolate to create a creamy layer.
  • Add Chocolate Layer: Pour the melted chocolate (and peanut butter, if using) over the oat layer in the baking dish. Spread it out evenly with a spatula.
  • Top with Remaining Oats: Take the rest of the oat mixture and crumble it evenly over the top of the chocolate layer, pressing it down slightly.
  • Chill: Place the baking dish in the refrigerator for at least 2-3 hours, or until the bars have set completely.
  • Cut and Serve: Once the bars are firm and fully set, remove them from the refrigerator and use a sharp knife to cut them into squares or bars.
