Ingredients:
For the lasagna roll-ups:
- 9 lasagna noodles (cooked according to package instructions)
- 2 large apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
- 1 tablespoon lemon juice
- 1 tablespoon granulated sugar
- 1 teaspoon ground cinnamon
For the caramel sauce:
- 1 cup granulated sugar
- 6 tablespoons unsalted butter, cut into pieces
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- A pinch of salt
For the cinnamon cream cheese filling:
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set it aside.
- Prepare the apples: In a medium bowl, toss the thinly sliced apples with lemon juice, granulated sugar, and ground cinnamon. Set aside.
- Make the caramel sauce: In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns into a deep amber color. Be careful not to burn it. Once melted, add the butter and stir until fully incorporated.
- Remove the saucepan from the heat and carefully pour in the heavy cream while stirring continuously. Be cautious as the mixture may bubble up. Stir in the vanilla extract and a pinch of salt. Set aside to cool slightly.
- Prepare the cinnamon cream cheese filling: In a separate bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and ground cinnamon until smooth and creamy.
- Assemble the lasagna roll-ups: Lay out the cooked lasagna noodles on a clean surface. Spread an even layer of the cinnamon cream cheese filling over each noodle. Next, place a few slices of the prepared cinnamon apples along the center of each noodle. Roll up the noodles gently and place them seam-side down in the greased baking dish.
- Drizzle the caramel sauce over the top of the rolled lasagna noodles, reserving some for serving.
- Cover the baking dish with foil and bake in the preheated oven for about 25 minutes, or until the lasagna rolls are heated through and the apples are tender.
- Remove the foil and bake for an additional 5-10 minutes to slightly brown the top.
- Once done, take the lasagna rolls out of the oven and let them cool for a few minutes.
- Serve the Caramel Apple and Cinnamon Lasagna Roll while warm, drizzling more caramel sauce on top if desired.
