Ingredients:
4 boneless, skinless chicken breasts (or fillets)
1 cup breadcrumbs (panko for extra crunch)
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
2 eggs
2 tbsp milk
1/2 cup all-purpose flour
Cooking spray or olive oil
Instructions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Pound the chicken to even thickness using a meat mallet (about 1/2-inch thick).
Prepare three bowls:
Bowl 1: Flour
Bowl 2: Eggs + milk (whisked together)
Bowl 3: Breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper (mixed)
Coat each chicken fillet:
Dredge in flour (shake off excess)
Dip in egg wash
Press into breadcrumb mixture to coat well
Place chicken on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with a little olive oil for crispiness.
Bake for 20–25 minutes or until golden brown and cooked through (internal temp 165°F/74°C). Flip halfway for even browning.
Let rest 5 minutes before serving.
