Every summer growing up, the kitchen always smelled like sunshine — sweet corn, fresh tomatoes from the garden, and the bite of just-chopped onions. On the hottest days, no one wanted to heat up the oven, so we’d keep things simple, fresh, and full of flavor.
This little dish — I like to call it my Summer Corn Salad — brings me right back to those barefoot afternoons, sitting on the porch with a bowl in hand and not a care in the world. It takes just a few minutes to whip up, but it’s packed with the best flavors of the season.
Ingredients:
2 ears of fresh corn (leave some husk on)
1 fresh tomato, chopped
1 small onion, chopped
1–2 tablespoons butter
Salt and black pepper, to taste
Instructions:
Microwave the corn (with some husk still on) for 2–3 minutes to steam.
Carefully cut the corn off the cob once cooled slightly.
In a bowl, combine corn, chopped tomato, and onion.
Add butter and microwave for about 30 seconds, just until melted.
Stir, season with salt and pepper, and enjoy!
