📝 Ingredients:
3–4 lb beef chuck roast
Salt and pepper, to taste
1 tbsp oil (for searing, optional)
1 onion, chopped
3 cloves garlic, minced
2 cups cooked pinto beans (or 1 can, drained and rinsed)
4 carrots, chopped
3 potatoes, chopped
2 cups beef broth
1 tbsp tomato paste (optional for richer flavor)
1 tsp paprika
1 tsp dried thyme
1 bay leaf
🍲 Instructions:
(Optional) Sear the roast in oil over medium-high heat until browned on all sides. This adds flavor, but can be skipped if you’re in a hurry.
Place roast in the slow cooker.
Add onion, garlic, carrots, potatoes, and pinto beans around the roast.
