Crispy Mashed Potato Cakes Recipe

These crispy mashed potato cakes are a delicious way to use up leftover mashed potatoes! They are golden brown on the outside and creamy on the inside.

Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour (or breadcrumbs)
  • 1 large egg, beaten
  • 2 tablespoons chopped green onions (or chives)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter (or oil) for frying

Instructions:

  1. Prepare the Mixture:

    • In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, flour, beaten egg, green onions, garlic powder, onion powder, salt, and pepper.
    • Mix until well combined. If the mixture is too soft, add more flour or breadcrumbs.
  2. Form the Cakes:

    • Scoop about 2 tablespoons of the mixture and shape it into a small patty.
    • Repeat with the remaining mixture, placing the cakes on a plate.
  1. Heat the Pan:

    • Heat a non-stick skillet or cast-iron pan over medium heat and add butter or oil.

  1. Cook the Potato Cakes:

    • Place the potato cakes in the pan without overcrowding.
    • Cook for 3-4 minutes per side, until golden brown and crispy.
    • Flip carefully and cook the other side.
  2. Serve:

    • Remove the cakes from the pan and drain on a paper towel.
    • Serve warm with sour cream, Greek yogurt, or a dipping sauce of your choice.

Tips:

✔ If your mashed potatoes are very soft, chill the mixture for 30 minutes before forming the cakes.
✔ Add crumbled bacon for extra flavor.
✔ For a crunchier texture, coat the cakes in breadcrumbs before frying.
