Potsticker Supper
This recipe came from one of those nights when no one could decide what to have for dinner, including me. I opened the freezer hoping inspiration would magically show up and found a bag of frozen potstickers shoved behind a bag of ice. Then I saw broth, soy sauce and a bag of coleslaw mix in the refrigerator. That sounded like a meal close enough so I threw it all in the crock pot and hoped for the best.
Honestly I was expecting something mediocre and way too soft. But sometime around the second hour the smell completely changed my mind. The soy sauce and the broth, the garlic and cabbage from the potstickers, all went together and suddenly the kitchen smelled like a tiny takeout place tucked into a strip mall somewhere.
Everyone was coming over, asking me what I was making. But the best part was a surprise. The potstickers held their shape and didn’t turn mushy, the broth turned rich and savory, and the cabbage soaked up all that flavor and still had a little texture. It tasted like soup on a cold evening, homey, only more substantial.
I make this when I want something warm and don’t want to think too much about dinner. It’s low effort but in the best way. I throw it all in, walk away for a bit and somehow dinner takes care of itself. I also almost always eat the leftovers straight from the fridge with chopsticks, pretending I’m “just having a bite.”
Ingredients:
- 1 bag frozen Potstickers.
- 4 cups chicken stock
- 1 bag cole slaw mix.
- 1/4 cup soy sauce 2 Tbs.
Guidance
Step 1: Put all ingredients in the slow cooker
- Add the chicken broth to the crockpot.
- Add soy sauce and stir quickly.
- Add the coleslaw mix and then place the frozen potstickers on top.
- I usually leave the potstickers rather stacked as they settle as they cook anyway.
Step 2: Cooking
- Cover and cook on LOW for 3 to 4 hours.
- The potstickers will get tender and the broth will absorb all that savory flavor.
- Around hour two, your kitchen starts smelling really good.
Step 3: Serve
- Scoop the potstickers and broth into bowls while they’re still hot.
- I like to top it with some green onions or a little bit of chili crunch if I have it.
Little Kitchen Observations
- Chicken potstickers are great but the pork ones are delicious as well.
- Don’t cook them too long or the wrappers become too soft.
- If you want something extra, sesame oil adds a lot of flavor.
- This makes pretty good leftovers the next day.
Verdict
This recipe is comfort food disguised as freezer food. Warm broth, soft dumplings, savory cabbage. Somehow it all comes together into something that tastes way more homemade than it probably should. And really, those are, in fact, the recipes worth saving.
