Chili Cheese Dogs

I began making these during football season when people kept showing up at my house hungry and somehow expecting a real meal every time. At first I tried the usual snacks, chips, dip, frozen appetizers but people always crowded around the hot food instead. One afternoon, I saw some hot dogs, chili and shredded cheese in the kitchen and decided that sounded like something good enough to throw in the slow cooker. i didn’t really expect anyone to care that much about them.

I was mistaken. After an hour or so of cooking the smell filled the house. Warm chili, melted cheese and hot dogs somehow make that old school ballpark smell that makes people instantly hungry even if they swore they already ate. Everyone kept popping the lid and pinching one early “just to taste it.”

When game time came, the cheese melted into the chili, the hot dogs soaked up all that flavor, and the buns softened up from the heat and sauce. Untidy? Of course. But you don’t complain when you’re eating chili dogs with two hands and a stack of napkins next to you. It is honestly part of the experience.

Now I make them for movie nights, lazy weekends, road trip food and random evenings when no one wants a complicated dinner. They remind me of concession stands, summer cookouts and those no-fuss meals that seem to please everyone with almost no effort. Somebody is always dropping chili on their shirt, too. Each and every time.

Ingredients:

  • 8 hot dogs
  • 1 (15 oz) can chili
  • 2 cups shredded cheddar

 

Directions:

Step 1: Add the hotdogs.

  • Place hot dogs in the slow cooker.
  • I usually just stack them to fit without much concern for aesthetics.

Step 2 Add chili and cheese

  • Spoon chili over hot dogs.
  • Sprinkle the shredded cheese over the top.
  • That’s it. Honestly one of the easiest recipes I do.

Step 3: Deep fry

  • Cover and cook on low for 2-3 hours or so.
  • The cheese should be melted and the chili gently bubbling around the edges.
  • By halfway through the smell is dangerously distracting.

Step 4: Serving

  • Put the hot dogs in the buns and add more chili and cheese on top.
  • Have napkins handy. Believe me.

Kitchen Notes Little

  • Here, mild cheddar doesn’t hold a candle to sharp cheddar in flavor.
  • Get more texture and add chopped onions or jalapeños.
  • Sometimes I’ll toast the buns if I feel ambitious.
  • Surprisingly, leftover chili cheese mixture is tasty over fries the next day.

Final Thoughts

These chili cheese dogs are not fancy food by any means, but that’s also part of what people love about them. Sometimes a little warm, cheesy, messy comfort food hits different.

Especially during football season or rainy weekends when everybody wants something simple and satisfying.
