Buttered Cabbage and Chicken
I’ve always said that the best dinners are the simplest ingredients. Not every meal calls for a long list of ingredients or a complicated recipe. Sometimes all it takes is a few basics and a slow cooker and time for it to come together naturally.
That’s how this buttered cabbage and chicken became a favorite in my kitchen. The first time I made it, I didn’t have a plan. I had a head of cabbage in the fridge and a package of chicken breasts that needed to be cooked. I could have done them separately but I wanted something easier.
So I chopped up the cabbage and layered in the slow cooker and put the chicken on top. Then a little broth, with a few pieces of butter and some seasoning. That was that.
I put the lid on and got on with my day. The smell began to drift through the house hours later. It wasn’t cloying, or heavy. It smelled warm and savory and comforting, like home-cooked meals had when she was growing up.
When I finally opened the lid the cabbage had softened into tender ribbons soaking up the buttery broth. The chicken looked juicy and tasty and everything in the pot looked like it was right there.
I served it in bowls, with a good amount of the broth ladled on top. No one rushed their dinner that night. People lingered at the table, returned for seconds, and spoke of how good a simple meal could taste.
That’s the beauty of recipes like these. They don’t use expensive ingredients or fancy tricks. They take everyday foods and turn them into something comforting and satisfying, and worth making again. Now this recipe has made its way into my menu when I need an easy dinner that feels wholesome and homemade.
