Ingredients
2 lbs baby potatoes (or diced regular potatoes)
2 tbsp olive oil

Instructions
Toss potatoes with olive oil and Italian seasoning in the slow cooker.
Cover and cook on LOW 4–5 hours or HIGH 2–3 hours, until tender.
Season with salt and pepper to taste and serve.
