Honey Garlic Chicken with Mushrooms

Honey Garlic Chicken with Mushrooms

There’s something comforting about the smell of garlic sizzling in a warm kitchen, especially on evenings when the day feels a little too long. This Honey Garlic Chicken with Mushrooms was born from one of those nights—when you want real food, full of flavor, but without a sink full of dishes or hours at the stove. It’s the kind of recipe that slowly fills the house with a sweet, savory aroma, drawing everyone closer before dinner is even served.

As the chicken browns, the mushrooms soak up every bit of flavor, turning tender and rich as they simmer in a glossy honey garlic sauce. The honey adds just the right touch of sweetness, balanced by savory soy sauce and plenty of fresh garlic, creating a sauce you’ll want to spoon over everything on your plate. It’s simple, cozy, and deeply satisfying—perfect for busy weeknights, quiet family dinners, or those moments when you just want a meal that feels like home.

This is one of those dependable recipes you’ll come back to again and again. Serve it over fluffy rice, buttery mashed potatoes, or even noodles, and you’ve got a dinner that feels comforting, familiar, and just a little bit special—without any extra effort.

Ingredients

  • 4 boneless, skinless chicken thighs or breasts

  • 2 cups mushrooms, sliced

  • ¼ cup honey

  • 3 tablespoons soy sauce

  • 4 cloves garlic, minced

  • 2 tablespoons olive oil or butter

  • Salt & pepper, to taste

  • Optional: fresh parsley or green onions for garnish

Instructions

  1. Season chicken with salt and pepper.

  2. Heat oil in a large skillet over medium heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.

  3. In the same skillet, add mushrooms and cook until softened.

  4. Add garlic, honey, and soy sauce. Stir and simmer 1–2 minutes.

  5. Return chicken to the skillet. Spoon sauce over the top.

  6. Cover and simmer 10–12 minutes, until chicken is cooked through and sauce thickens.

  7. Garnish and serve.

Note:

  • Chicken thighs stay extra juicy, but chicken breasts work just as well—just don’t overcook them.

  • For a thicker sauce, let it simmer uncovered for a few extra minutes at the end.

  • Add a splash of water or chicken broth if the sauce gets too thick.

  • This dish pairs perfectly with rice, mashed potatoes, or egg noodles.

  • Leftovers reheat beautifully and taste even better the next day as the flavors deepen.
