Slow Cooker Cheesy Bacon Ranch Chicken Casserole

Some of the best comfort foods come from busy days when you need dinner to practically cook itself. I first made this Cheesy Bacon Ranch Chicken Casserole on one of those evenings—homework spread across the table, everyone hungry, and no time to hover over the stove. I tossed a few simple ingredients into the slow cooker, crossed my fingers, and hoped for the best.

Hours later, the house was filled with the irresistible smell of creamy ranch seasoning, melty cheese, and savory bacon. When I lifted the lid, I knew it was a winner. The chicken was tender, the sauce rich and comforting, and every bite felt like the kind of meal that brings everyone to the table without being called twice.

This slow cooker casserole has since become a go-to favorite—perfect for busy weeknights, potlucks, or anytime you want a hearty, crowd-pleasing meal with minimal effort. Cozy, creamy, and packed with flavor, it’s comfort food made easy.

Ingredients:

  • 2 lbs boneless, skinless chicken breasts

  • 1 packet ranch seasoning mix

  • 1 (10.5 oz) can cream of chicken soup

  • 1 cup sour cream

  • 2 cups shredded cheddar cheese (or cheddar-jack blend)

  • 1½ cups cooked bacon, crumbled

  • 2 cups cooked pasta (rotini or penne work well) or diced cooked potatoes

  • Optional: chopped green onions for topping

Instructions:

  1. Add chicken
    Place the chicken breasts in the bottom of the slow cooker.

  2. Make the sauce
    In a bowl, mix together the ranch seasoning, cream of chicken soup, and sour cream until smooth.

  3. Pour & cook
    Pour the mixture over the chicken. Cover and cook:

    • Low: 5–6 hours

    • High: 3–4 hours
      Until the chicken is tender and cooked through.

  4. Shred chicken
    Remove the chicken, shred it with two forks, then return it to the slow cooker.

  5. Add the good stuff
    Stir in the cooked pasta (or potatoes), bacon, and 1½ cups of shredded cheese.

  6. Melt & finish
    Sprinkle the remaining cheese on top. Cover and cook on low for 20–30 minutes, until melted and creamy.

  7. Serve
    Garnish with green onions if desired. Serve warm.

  • Add broccoli or peas for a veggie boost

  • Use hash browns instead of pasta for a different texture

  • Swap sour cream for plain Greek yogurt if you want it a bit lighter

  • Great served with garlic bread or a simple side salad
