Slow Cooker No Peek Chicken & Rice

Some recipes are meant to be fuss-free, and this one is a true “set it and forget it” classic. Slow Cooker No Peek Chicken & Rice is the kind of comfort food that’s been passed around in family kitchens for generations. The magic is in the name—you layer everything in, put the lid on, and resist the urge to peek while it works its magic. Hours later, you lift the lid to perfectly tender chicken nestled into creamy, flavorful rice. It’s the kind of meal that feels like a warm hug at the end of a long day.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs

  • 2 cups long-grain white rice (uncooked)

  • 2 cans (10.5 oz each) cream of chicken soup

  • 1 can (14 oz) chicken broth

  • 1 packet onion soup mix

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt & black pepper, to taste

  • 2 tbsp butter, cut into small pieces

Instructions

  1. Grease the inside of your slow cooker with a little butter or nonstick spray.

  2. Pour the uncooked rice evenly into the bottom.

  3. In a bowl, whisk together the cream of chicken soup, chicken broth, garlic powder, and paprika.

  4. Pour this mixture over the rice.

  5. Place chicken breasts (or thighs) on top. Season with salt and pepper.

  6. Sprinkle the onion soup mix evenly over the chicken.

  7. Dot with butter pieces.

  8. Cover with the lid and cook on LOW for 5–6 hours or until chicken is cooked through and rice is tender. No peeking while it cooks!

  9. Fluff the rice, shred or slice the chicken, and serve warm.

Notes

  • You can swap one can of cream of chicken soup for cream of mushroom or cream of celery for variety.

  • Add frozen peas or steamed broccoli at the end for a veggie boost.

  • Works great with bone-in chicken too, but add 1 extra hour of cook time.
