Mornings at Grandma’s house always meant one thing—homemade biscuits, sizzling sausage, and creamy gravy that could melt away any chill in the air. But when cousins and uncles filled the kitchen, Grandma would take her Southern magic to the next level with a casserole big enough for everyone. This dish brings together everything we love about a classic biscuits and gravy breakfast—with hearty eggs and melty cheese—into one cozy bake. It’s perfect for feeding a crowd, making ahead, or turning any morning into something special.
Ingredients:
1 (16 oz) can refrigerated biscuits (like Pillsbury Grands)
1 lb breakfast sausage (pork or turkey)
2 tbsp all-purpose flour
2 cups milk (whole or 2%)
6 large eggs
1/2 cup shredded cheddar cheese (optional)
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp garlic powder (optional)
1/4 tsp paprika (for color, optional)
Instructions:
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Cut biscuits into quarters and spread evenly in the bottom of the dish.
Brown the sausage in a skillet over medium heat until fully cooked. Do not drain all the fat.
Make the gravy:
Sprinkle flour over the sausage and stir to coat.
Cook for 1 minute, then slowly whisk in the milk.
Stir constantly until it thickens into a creamy sausage gravy (5–6 minutes).
Season with a bit of salt and pepper. Remove from heat.
Whisk the eggs in a separate bowl with salt, pepper, and optional garlic powder.
Assemble the casserole:
Pour the eggs evenly over the biscuits.
Spoon the sausage gravy over the top.
Sprinkle with cheese if using.
Bake uncovered for 40–45 minutes, or until eggs are set and the top is golden.
(Check the center with a knife—it should come out clean.)Let rest 5–10 minutes before serving.
Tips:
Want extra cheesy? Add more shredded cheese on top during the last 10 minutes.
You can make this the night before—assemble and refrigerate, then bake in the morning.
For heat, mix in a few dashes of hot sauce or chopped jalapeños with the eggs.
