Slow Cooker Parmesan Meatloaf

Looking for a comforting, no-fuss dinner? This Slow Cooker Parmesan Meatloaf is a cheesy, flavorful twist on the classic—and it practically makes itself! With a rich blend of Italian herbs, Parmesan, and a tangy ketchup topping, this recipe is perfect for busy weeknights or cozy weekends. Just mix, shape, and let your slow cooker do the work!

Ingredients

  • 2 lbs ground beef

  • 1 cup Italian-style breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup milk

  • 2 large eggs

  • 1/4 cup chopped fresh parsley (or 1 tbsp dried)

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp Italian seasoning

  • 1 cup marinara sauce (plus more for serving)

  • 1 cup shredded mozzarella (optional topping)

Instructions

  1. Mix the Meatloaf: In a large bowl, combine ground beef, breadcrumbs, Parmesan, milk, eggs, parsley, onion, garlic, salt, pepper, and Italian seasoning. Mix until just combined—don’t overmix.

  2. Shape and Prepare: Shape the meat mixture into a loaf and place it in a lined or greased slow cooker.

  3. Top with Sauce: Pour the marinara sauce over the top of the meatloaf.

  4. Cook:

    • Low: 6–7 hours

    • High: 3–4 hours

  5. Optional: Sprinkle with mozzarella during the last 15 minutes of cooking. Cover and let melt.

  6. Rest & Serve: Let it rest 10 minutes before slicing. Serve with extra marinara and a sprinkle of Parmesan!

📝 Notes

  • Great with mashed potatoes, roasted veggies, or on a sandwich the next day!

  • You can use half ground beef and half ground pork for extra richness.
