Ingredients
2 lbs ground beef
1 cup Italian-style breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup milk
2 large eggs
1/4 cup chopped fresh parsley (or 1 tbsp dried)
1 small onion, finely chopped
2 garlic cloves, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
1 cup marinara sauce (plus more for serving)
1 cup shredded mozzarella (optional topping)
Instructions
Mix the Meatloaf: In a large bowl, combine ground beef, breadcrumbs, Parmesan, milk, eggs, parsley, onion, garlic, salt, pepper, and Italian seasoning. Mix until just combined—don’t overmix.
Shape and Prepare: Shape the meat mixture into a loaf and place it in a lined or greased slow cooker.
Top with Sauce: Pour the marinara sauce over the top of the meatloaf.
Cook:
Low: 6–7 hours
High: 3–4 hours
Optional: Sprinkle with mozzarella during the last 15 minutes of cooking. Cover and let melt.
Rest & Serve: Let it rest 10 minutes before slicing. Serve with extra marinara and a sprinkle of Parmesan!
