Ingredients:

  • 1 lb ground beef

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 1 cup shredded carrots

  • 1 cup chopped celery

  • 1 red bell pepper, sliced

  • 1 can (15 oz) bean sprouts, drained

  • 1/2 cup low-sodium soy sauce

  • 1/4 cup hoisin sauce

  • 2 tbsp oyster sauce (optional for extra flavor)

  • 1 tbsp sesame oil

  • 1 tsp ground ginger

  • 1/2 tsp black pepper

  • 8 oz chow mein noodles or cooked spaghetti

  • Green onions & sesame seeds for garnish (optional)

Instructions:

  1. Brown the beef:
In a skillet over medium heat, brown the ground beef with onion and garlic. Drain any excess fat.

  2. Add to slow cooker:
Transfer beef mixture to the slow cooker. Add carrots, celery, bell pepper, and bean sprouts.

  3. Mix sauce:
In a small bowl, whisk together soy sauce, hoisin, oyster sauce (if using), sesame oil, ginger, and pepper. Pour over the beef and vegetables.

  4. Cook:
Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until veggies are tender.

  5. Add noodles:
About 15–20 minutes before serving, stir in cooked chow mein noodles or spaghetti. Let them soak up the sauce.

  6. Serve:
Garnish with green onions and sesame seeds if desired. Enjoy!

Note:
For the best texture, add the cooked noodles toward the end of the cooking time so they don’t become mushy. You can also use rice noodles or low-carb alternatives like zucchini noodles for a lighter version. Feel free to swap in your favorite veggies — broccoli, snap peas, or mushrooms all work great!
