Ingredients:

  • 1 lb ground beef

  • 1 small onion, chopped

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 cup frozen or canned corn (drained if canned)

  • 1 can (14.5 oz) diced tomatoes, drained

  • 1 cup cooked rice (white or brown)

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • 1/4 tsp smoked paprika (optional)

  • Salt and pepper to taste

  • 1 1/2 cups shredded cheddar or Mexican blend cheese

  • Fresh cilantro or green onions for garnish (optional)

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.

  3. Add onion, peppers, and corn to the skillet. Cook 4–5 minutes, until slightly softened.

  4. Stir in diced tomatoes, cooked rice, chili powder, cumin, garlic powder, paprika, salt, and pepper. Cook another 2–3 minutes until heated through.

  5. Spread the beef mixture into a greased 9×13-inch baking dish.

  6. Sprinkle evenly with shredded cheese.

  7. Bake uncovered for 15–20 minutes or until the cheese is melted and bubbly.

  8. Garnish with chopped cilantro or green onions if desired.

Tips:

  • Add a drained can of black beans for extra protein and texture.

  • Spice it up with jalapeños or a dash of hot sauce.

  • Serve with sour cream or avocado on the side.
