Slow Cooker Cheesy Beef and Macaroni Bake

Nothing beats a warm, hearty meal that practically cooks itself—and this Slow Cooker Cheesy Beef and Macaroni Bake is comfort food at its best. With tender pasta, seasoned ground beef, and plenty of gooey melted cheese, it’s a family-friendly dinner that’s easy to throw together and always hits the spot. Just a few simple ingredients, one slow cooker, and you’ve got a cozy, cheesy classic perfect for busy weeknights or lazy weekends.

Ingredients:

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 (15 oz) can tomato sauce

  • 1 (14.5 oz) can diced tomatoes (undrained)

  • 2 tsp Italian seasoning

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 2 cups uncooked elbow macaroni

  • 2 cups shredded cheddar cheese (divided)

  • 1 cup shredded mozzarella cheese

  • 2 cups beef broth or water (for pasta)

Instructions:

  1. Brown the beef
    In a skillet over medium heat, cook the ground beef with the onion and garlic until the meat is browned. Drain excess grease.

  2. Combine in slow cooker
    Transfer the beef mixture to your slow cooker. Add tomato sauce, diced tomatoes, Italian seasoning, salt, pepper, uncooked macaroni, and beef broth or water. Stir well to combine.

  3. Cook
    Cover and cook on LOW for 2 to 3 hours, or until pasta is tender. (Check after 2 hours to avoid overcooking.)

  4. Add cheese
    Stir in 1½ cups cheddar cheese and the mozzarella. Mix until melted and combined.

  5. Top and finish
    Sprinkle the remaining ½ cup cheddar cheese on top. Cover and let it melt for another 5-10 minutes.

  6. Serve
    Spoon into bowls and serve hot! Garnish with parsley if desired.

Tips:

  • Use ground turkey or sausage instead of beef if preferred.

  • Add chopped bell peppers or mushrooms for more veggies.

  • Great with a side of garlic bread!
