German Potato Pancakes, also known as Kartoffelpuffer, are a beloved comfort food made from simple ingredients like grated potatoes, onion, and a touch of flour. Crispy on the outside and tender inside, they’re perfect served with applesauce or sour cream for a delicious snack, side dish, or even a light meal!
Ingredients:
4 large potatoes (Russet or Yukon Gold work great)
1 small onion
2 eggs
1/4 cup all-purpose flour
1 tsp salt
1/4 tsp black pepper
Oil for frying (vegetable or canola)
Optional for serving:
Applesauce, sour cream, or fresh herbs
Instructions:
Peel and grate the potatoes and the onion. (You can use a box grater or a food processor.)
Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as you can.
In a large bowl, mix the drained potatoes and onion with the eggs, flour, salt, and pepper until well combined.
Heat oil in a large skillet over medium-high heat.
Drop spoonfuls of the mixture into the hot oil and flatten them gently with a spatula.
Fry until golden brown and crispy, about 3–4 minutes per side.
Drain on paper towels.
Serve warm with applesauce or sour cream!
Note:
Be sure to squeeze out as much moisture as possible from the potatoes and onions — this helps the pancakes get extra crispy!
