Fluffy Potato Rolls are a delightful addition to any meal, offering a soft, pillowy texture with a hint of potato flavor. Here’s a simple recipe to prepare them:


  • 1 cup warm water (110°F/45°C)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/2 cup mashed potatoes (cooled)
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon salt
  • 4 to 4 1/2 cups all-purpose flour
  • Additional melted butter for brushing (optional)


  1. Activate the Yeast:
    • In a small bowl, combine warm water and yeast. Stir gently and let it sit for about 5-10 minutes until foamy.
  2. Prepare the Dough:
    • In a large mixing bowl, combine the mashed potatoes, melted butter, sugar, egg, and salt. Mix well.
    • Add the activated yeast mixture and stir to combine.
    • Gradually add the flour, about 1 cup at a time, stirring well after each addition, until a soft dough forms.

  1. Knead the Dough:
    • Turn the dough out onto a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic. Add more flour if needed to prevent sticking, but keep in mind that the dough should remain soft.
  2. First Rise:
    • Place the dough in a greased bowl, turning once to coat the dough with oil.
    • Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm, draft-free place for about 1 to 1 1/2 hours, or until doubled in size.
  3. Shape the Rolls:
    • After the dough has doubled in size, punch it down gently to release the air.
    • Divide the dough into 12 equal portions and shape each portion into a smooth ball. Place the dough balls in a greased 9×13-inch baking dish, leaving a little space between each roll.
  4. Second Rise:
    • Cover the baking dish with a clean kitchen towel or plastic wrap and let the rolls rise for another 30-45 minutes, or until doubled in size.
  5. Bake the Rolls:
    • Preheat your oven to 375°F (190°C).
    • Once the rolls have doubled in size, bake them in the preheated oven for 15-18 minutes, or until they are golden brown on top and sound hollow when tapped on the bottom.
    • Optionally, brush the tops of the rolls with melted butter as soon as they come out of the oven for extra flavor and shine.

    • Let the rolls cool for a few minutes in the baking dish before transferring them to a wire rack to cool completely.
    • Serve warm or at room temperature, and enjoy!
