Wet burritos


Wet burritos are a delicious Mexican-American dish that consists of burritos smothered in a flavorful sauce and melted cheese. Here’s a basic recipe for preparing wet burritos:


For the Burritos:

  • 4 large flour tortillas
  • 2 cups cooked and shredded chicken, beef, or beans (your choice)
  • 1 cup cooked rice
  • 1 cup black beans (cooked or canned)
  • 1 cup corn kernels (frozen, canned, or fresh)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup sour cream (optional)
  • Salt and pepper to taste

For the Sauce:

  • 2 cups red enchilada sauce (store-bought or homemade)
  • 1/2 cup tomato sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For Garnish (optional):

  • Chopped fresh cilantro
  • Sliced jalapeños
  • Sliced avocado
  • Sliced green onions


1. Prepare the Filling:

  • In a skillet, sauté the diced onions and bell peppers in a bit of oil until they soften, about 3-4 minutes.
  • Add the shredded chicken, beef, or beans to the skillet and cook until heated through.
  • Stir in the diced tomatoes, corn, black beans, and cooked rice. Cook for an additional 2-3 minutes until everything is well combined. Season with salt and pepper to taste.

2. Assemble the Burritos:

  • Lay out each flour tortilla and spoon some of the filling mixture onto the center of each one.
  • Sprinkle shredded cheese over the filling.

3. Roll the Burritos:

  • Fold in the sides of the tortilla and then roll it up tightly, enclosing the filling.
  • Place the rolled burritos seam-side down in a baking dish.

4. Prepare the Sauce:

  • In a separate saucepan, combine the red enchilada sauce, tomato sauce, chili powder, cumin, garlic powder, salt, and pepper. Heat the sauce over medium heat until it’s heated through.

5. Pour the Sauce Over the Burritos:

  • Pour the hot sauce evenly over the burritos in the baking dish, making sure they are well-covered.

6. Bake:

  • Preheat your oven to 375°F (190°C).
  • Cover the baking dish with aluminum foil and bake for about 20 minutes until the burritos are heated through and the cheese is melted.

7. Garnish and Serve:

  • Remove the burritos from the oven, and garnish them with sliced black olives, chopped cilantro, sliced jalapeños, avocado, and green onions if desired.
  • Optionally, drizzle sour cream over the top.

8. Serve:

  • Serve your wet burritos hot, and enjoy!
