Slow Cooker Pepper Steak is a savory and satisfying dish that combines tender beef, colorful bell peppers, and onions in a flavorful sauce. Ingredients:

  • 2 pounds (about 1 kg) beef steak, thinly sliced (sirloin or flank steak works well)
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1/2 cup beef broth or stock
  • 1/4 cup soy sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 1 teaspoon ginger, minced or grated
  • 1/4 teaspoon black pepper

  • 1/4 teaspoon red pepper flakes (adjust to your preferred level of spiciness)
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for cornstarch slurry)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)
  • Cooked rice or noodles (for serving)

Instructions:

  • In a bowl, whisk together the beef broth, soy sauce, tomato paste, brown sugar, minced ginger, black pepper, and red pepper flakes. This will be your marinade and sauce.
  • Place the sliced beef in a large resealable plastic bag or a bowl. Pour half of the marinade over the beef, making sure it’s well coated. Reserve the remaining marinade for later.

  • Refrigerate the marinating beef for at least 30 minutes, but ideally 1-2 hours, to let the flavors infuse.
  • In the slow cooker, layer the sliced onions, red bell pepper, green bell pepper, and minced garlic.
  • Place the marinated beef on top of the vegetable layers.
  • Pour the reserved marinade over the beef and vegetables in the slow cooker.
  • Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours. The beef should become tender and the flavors should meld together.
  • If you desire a thicker sauce, mix cornstarch and water in a small bowl to create a slurry. About 30 minutes before serving, stir the cornstarch slurry into the slow cooker and let it continue cooking until the sauce thickens.
  • Once the cooking time is complete, taste and adjust the seasoning if needed.
  • Serve the slow cooker pepper steak over cooked rice or noodles. Garnish with sliced green onions and sesame seeds.
