ONE POT LASAGNA SOUP

Lasagna Soup

One Pot Lasagna Soup is a delicious and convenient twist on traditional lasagna. It captures all the flavors of lasagna in a comforting soup that’s easy to make in just one pot. Here’s a basic recipe for you to try:

Ingredients:

  • 1 lb ground Italian sausage (you can use a mix of beef and pork as well)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 2 cups broken lasagna noodles (about 6-7 regular noodles)
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. In a large pot or Dutch oven, cook the ground Italian sausage over medium heat until browned. Use a spoon to break it into smaller pieces as it cooks. If using lean meat, you may need to add a bit of oil to prevent sticking.
  2. Add the chopped onion to the pot and sauté for about 3-4 minutes until it’s translucent and softened.
  3. Stir in the minced garlic and cook for another 1 minute until fragrant.
  4. Add the crushed tomatoes, diced tomatoes (with their juices), chicken or vegetable broth, dried basil, dried oregano, salt, and black pepper. Give it a good stir.
  5. Bring the soup to a gentle simmer, then add the broken lasagna noodles. Stir occasionally to prevent sticking and cook until the noodles are al dente, following the package instructions as a guide.

  1. In a separate bowl, mix the ricotta cheese and grated Parmesan cheese together.
  2. Once the noodles are cooked, reduce the heat to low and ladle a bit of the soup into the bowl with the ricotta and Parmesan mixture. Mix well until it’s smooth and creamy.
  3. Return the creamy mixture to the pot and stir to incorporate it into the soup.
  4. Taste the soup and adjust the seasoning if needed.
  5. Just before serving, stir in about 1 cup of shredded mozzarella cheese until it’s melted and incorporated.
  6. Ladle the hot soup into bowls and top each serving with a sprinkle of remaining shredded mozzarella cheese and some fresh basil or parsley if desired.
