  • Preheat the oven: Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  • Beat the egg white: In a medium-sized mixing bowl, whisk the egg white and water together until the mixture becomes frothy.
  • Add vanilla extract: Stir in the vanilla extract into the egg white mixture.
  • Coat the pecans: Add the pecans to the egg white mixture and stir until all the pecans are coated evenly.
  • Prepare the cinnamon sugar mixture: In a separate bowl, mix the granulated sugar, ground cinnamon, and salt (if using) until well combined.

  • Coat pecans with cinnamon sugar: Pour the cinnamon sugar mixture over the coated pecans and toss until all the pecans are evenly coated with the sugar mixture.
  • Spread on baking sheet: Spread the coated pecans in a single layer on the prepared baking sheet.
