Oven Baked Chicken Cobbler Pasta
Some recipes are from well thought out dinners. Others are when you’re trying to clean out the refrigerator before grocery shopping. This Oven Baked 5-Ingredient Chicken Cobbler Pasta is in the latter category and truthfully, I’m glad it is.
A few months ago I had some leftover rotisserie chicken in the fridge, half a box of pasta in the pantry and a biscuit mix that had been pushed to the back of the cabinet for far too long. I didn’t want to make another chicken casserole that tasted like every other casserole we’d ever eaten.
I wanted something comforting but different. I mixed it all together, put a simple biscuit topping on the pasta and slid the baking dish into the oven. The smell alone made me feel this recipe was worth writing down after 30 minutes.
The chicken pasta bubbled below, its creamy sauce crowned with a golden, buttery biscuit crust. Every bite had tender chicken, rich sauce, soft pasta and a just enough crunch from the cobbler topping.
By the end of dinner someone had scraped the baking dish clean with a spoon. That’s the best compliment you can get.
This recipe has since become one of those dinners I pull out when life feels busy. It looks like it took all afternoon but the truth is it comes together with just five simple ingredients.
Want easy chicken pasta recipes? Looking for cheap family meals? Want high protein comfort food? Searching for easy casserole dishes? Planning meal prep dinners? Craving oven baked chicken recipes? This dish is one that you want in your recipe book.
Why this recipe is special
- I don’t have anything against traditional casseroles, but sometimes they all start to taste the same.
- This one is different than the others.
- The creamy pasta stays soft and comforting and the biscuit topping bakes into a flaky crust that reminds me almost of chicken pot pie.
- It’s a bit like a pasta bake and a cobbler mixed together.
- That’s what makes it fun.
- Better yet, you don’t need a long list of ingredients.
- Most of the ingredients are probably already in your pantry or refrigerator.
Ingredients:
All you need are 5 ingredients.
- 3 cups cooked, shredded chicken
- 12 oz cooked rotini or penne pasta
- 1 can (10 1/2 oz.) cream of chicken soups
- 1 c. shredded cheddar cheese
One package biscuit baking mix, prepared according to package directions
How to Make It
- Preheat oven to 375 degrees.
- Grease a 9×13″ baking dish lightly.
- In a large bowl combine the cooked chicken, pasta, cream of chicken soup and shredded cheddar cheese.
- Stir until everything is well mixed.
- Transfer the mixture to the prepared baking dish.
- Prepare biscuit mix according to package directions.
- Spoon the biscuit batter evenly over the top of the pasta mixture in spoonfuls. Don’t worry about covering every inch. As it bakes, the topping spreads.
- Put the casserole in the oven and bake for 30 to 35 minutes, or until the biscuit topping is golden brown and the filling is bubbling around the edges.
- Let the casserole stand for five minutes before serving.
- You wait less and it is much easier to scoop.
Some Things I Learned on the Way
- Rotisserie chicken is perfectly acceptable here.
- It saves time, but also adds an extra flavor that plain cooked chicken sometimes lacks.
- I’ve also learned not to spread the biscuit batter too thin.
- Leave small gaps so steam can escape and the biscuits can bake evenly.
- The result is lighter and airier.
My Favorite Serving Suggestion
- This casserole already feels like a complete meal, but I usually add something green to the table.
- The roasted broccoli cuts through the richness beautifully.
- Steamed green beans are also a good choice.
- In the warmer weather, if we’re eating out, I’ll make a simple garden salad with a light vinaigrette.
- Fresh vegetables prevent the meal from being too heavy.
Simple Ways to Change It
- One of my favorite things about this recipe is how forgiving it is.
- Sometimes I use cheddar instead of Monterey Jack.
- Other times I’ll throw frozen peas in with the pasta mixture before baking.
- A handful of cooked bacon adds a smoky flavor that pairs wonderfully with the creamy chicken.
- If my family wants a little spice, I sprinkle cracked black pepper or crushed red pepper flakes on the completed casserole.
- Those little variations keep the recipe interesting, without complicating it.
Easy lunch leftovers
- This recipe also reheats quite well.
- Leftovers will keep in an airtight container in the refrigerator for up to 4 days.
- Heat individual portions in the microwave or place the baking dish in a 325°F oven until heated through.
- The biscuit topping gets a little softer after refrigeration, but the flavor is even better the next day.
- Leftovers are easy to carry and taste good for hours, so I often take them to work for lunch.
The Kind of Recipe You’ll Make Again and Again
- Every cook needs a couple of go-to recipes when the week gets crazy. This Oven Baked 5-Ingredient Chicken Cobbler Pasta is one of mine. Simple ingredients, fills the kitchen with an amazing aroma and disappears faster than I expect.
- There are dinners that look impressive, but take a lot of work. This isn’t one of *those*.
- It is working.
- That’s good.
- It’s the kind of meal that has people wandering into the kitchen saying “What smells so good?”
- A recipe that can do that with only five ingredients is worth holding close.
