Sausage and Potatoes

Not sure who needs to hear this, but dinner doesn’t have to be complicated. Some of my family’s favorite meals began as days when I had little plan. You know the kind of day I’m talking about. The laundry piles up, the phone keeps ringing, and for some reason five o’clock gets here much sooner than expected.

And that’s how this recipe entered my kitchen as a staple. One morning I was in front of the refrigerator trying to decide what to make for dinner. I wasn’t in the mood to run a grocery, and I sure as hell wasn’t interested in a sink full of dishes that night.

I looked around quickly and came up with smoked sausage, a bag of potatoes, an onion and some chicken broth. Nothing special. In fact, I almost talked myself out of making anything with those ingredients. They seemed too simple. I’m glad I changed my mind. I just cut everything up, put it in the slow cooker, put the lid on and went about my day.

And that’s one reason I love slow cooker recipes so much. When the work is done, it’s done. I don’t have to stir or watch or worry about something burning on the stove. Several hours later I walked back into the kitchen and immediately smelled dinner.

The house was full of the smoky odor of the sausage. The potatoes had softened beautifully and the onions had almost melted into the broth. It all smelled rich and comforting, like something that had been simmering in a farmhouse kitchen all day.

I opened the lid and took a hurried taste. That one taste became two. Then three. When my family sat down to eat dinner, I already knew this recipe was a winner. The potatoes soaked up all the flavour from the sausage and broth. Everything was hearty and satisfying without being heavy. Best of all, everyone cleaned their plates and there were no complaints whatsoever.

But any home cook knows that’s a victory worth celebrating. Now this dinner is a fixture on our dinner rotation. It’s fast, uses low-cost ingredients and makes the type of comfort food people actually want to eat. Some recipes are fancy, with fancy ingredients. Others get into your recipe box because they make your life easier. This one definitely falls in the second category.
