Ingredients:
4 boneless, skinless chicken breasts
1 (10.5 oz) can cream of chicken soup
1/2 cup chicken broth
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon onion powder
Salt and pepper, to taste
1 1/2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese (optional for extra flavor)
1 tablespoon cornstarch + 2 tablespoons water (optional, to thicken sauce)
Fresh parsley, chopped (for garnish)
Instructions:
Add to slow cooker: Place chicken breasts in the bottom of your slow cooker.
Mix sauce: In a bowl, mix cream of chicken soup, chicken broth, garlic powder, Italian seasoning, onion powder, salt, and pepper. Pour over chicken.
Cook: Cover and cook on low for 5–6 hours or high for 2.5–3 hours, until chicken is tender and cooked through.
Shred or leave whole: You can shred the chicken for a creamy dish or leave the breasts whole.
Add cheese: Sprinkle mozzarella (and Parmesan if using) evenly over the chicken. Cover and cook on high for 10–15 minutes until cheese is melted and bubbly.
(Optional) Thicken sauce: If sauce is too thin, stir together cornstarch and water in a small bowl. Mix into the sauce and let cook for 10 more minutes on high until thickened.

Note:
For extra flavor, you can add sliced mushrooms or fresh spinach about 30 minutes before the cooking time is up. If you prefer a thicker sauce, stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) at the end and cook on high for 10 minutes until it thickens.
