Homemade Taco Bell Enchirito 
Craving that old-school Taco Bell favorite? This Enchirito is the perfect combo of a burrito and an enchilada—packed with beef, beans, and smothered in sauce and cheese.
Whether you’re bringing back nostalgia or just want something super tasty, this recipe hits the spot every time!
Ingredients:
1 lb ground beef
1 packet taco seasoning
1/2 cup water
6 flour tortillas (6-8 inch size)
1 can refried beans (warmed)
1 can (10 oz) red enchilada sauce
1/2 cup chopped onions (optional, like the original)
1 to 1 1/2 cups shredded cheddar or Mexican blend cheese
Black olives (optional topping)
Directions:
Cook the beef:
In a skillet over medium heat, brown the ground beef. Drain excess grease, then stir in taco seasoning and water. Simmer until thickened (about 5 minutes).Warm the tortillas:
Microwave them in a damp paper towel for about 20 seconds, or heat in a pan until pliable.Assemble the enchiritos:
Spread a spoonful of refried beans down the center of each tortilla.
Add seasoned beef, some chopped onions (if using), and a sprinkle of cheese.
Roll them up like burritos.
Add sauce and cheese:
Place rolled tortillas in a baking dish.
Pour enchilada sauce over the top, then sprinkle with remaining cheese and more onions (optional).
Bake:
Bake at 350°F (175°C) for about 15-20 minutes, until hot and melty.Top and serve:
Garnish with sliced black olives if desired. Serve with rice or chips and salsa!
Note:
Want to make this extra authentic? Wrap each Enchirito individually in foil before baking, just like Taco Bell used to do back in the day!
