Slow Cooker Creamy Chicken and Cheese Casserole

Just toss everything in the slow cooker and let it do the work while you go about your day. Perfect over pasta or rice, it’s a creamy, hearty meal that’s always a crowd-pleaser!

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 can (10.5 oz) cream of chicken soup

  • 1 can (10.5 oz) cream of mushroom soup (or use two chicken if you prefer)

  • 1 cup sour cream

  • 1 cup shredded cheddar cheese

  • 1/2 cup grated Parmesan cheese

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste

  • 1/2 teaspoon paprika (optional)

  • 1/2 cup chicken broth

  • 3 cups cooked pasta or 3 cups cooked rice (for serving)

  • Optional topping: crushed butter crackers or French fried onions

Instructions:

  1. Prep the Chicken
    Place chicken breasts in the bottom of your slow cooker. Sprinkle with garlic powder, onion powder, salt, pepper, and paprika (if using).

  2. Make the Sauce
    In a mixing bowl, combine cream of chicken soup, cream of mushroom soup, sour cream, chicken broth, and half of both cheeses. Stir until smooth.

  3. Pour and Cook
    Pour the sauce over the chicken. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.

  4. Shred Chicken
    Once cooked, shred the chicken with two forks right in the slow cooker.

  5. Add Cooked Pasta or Rice
    Stir in the cooked pasta or rice and top with the remaining cheeses. Cover and cook for 10–15 more minutes, or until cheese is melted.

  6. Add Topping (Optional)
    Sprinkle crushed crackers or French fried onions on top just before serving for extra crunch.

Tips:

  • Use rotisserie chicken to speed things up — reduce the cook time.

  • Add frozen peas or steamed broccoli in the last 30 minutes for a veggie boost.

  • Want more zip? Mix in a handful of shredded pepper jack cheese.
