Warm, comforting, and packed with flavor, Hearty Lasagna Soup Delight brings all the classic layers of lasagna into one delicious bowl. With rich tomato broth, tender pasta, and a cheesy topping that melts right in, this soup is the perfect blend of cozy and satisfying. Ingredients:

  • 1 lb ground beef or Italian sausage

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 4 cups chicken or beef broth

  • 1 (28 oz) can crushed tomatoes

  • 1 (15 oz) can tomato sauce

  • 2 tsp Italian seasoning

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp red pepper flakes (optional)

  • 8 lasagna noodles, broken into bite-sized pieces

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • Fresh basil or parsley, chopped (for garnish)

Instructions:

  1. Brown the meat:
    In a large pot over medium heat, cook the ground beef or sausage until browned. Drain excess fat.

  2. Sauté aromatics:
    Add the onion and garlic to the pot. Cook for 2–3 minutes until softened.

  3. Add liquids and seasonings:
    Stir in the broth, crushed tomatoes, tomato sauce, Italian seasoning, salt, pepper, and red pepper flakes. Bring to a boil.

  4. Add noodles:
    Reduce heat to a simmer. Add the broken lasagna noodles and cook for 10–12 minutes or until tender.

  5. Prepare cheese mixture:
    In a small bowl, mix ricotta, mozzarella, and Parmesan cheeses.

  6. Serve:
    Ladle soup into bowls. Top each with a generous spoonful of the cheese mixture and sprinkle with fresh herbs.

Note:
This soup thickens as it sits, so if you’re enjoying leftovers, just add a splash of broth or water when reheating to bring back that perfect soup-like consistency. For a lighter option, you can use ground turkey or lean beef, and whole wheat or gluten-free noodles work great too!
