If you’re looking for the perfect combination of sweet, savory, and smoky, this Bacon Brown Sugar Pork Tenderloin hits all the right notes. Tender, juicy pork is wrapped in crispy bacon and coated with a rich brown sugar glaze that caramelizes beautifully in the oven. It’s an easy yet impressive dish that’s perfect for family dinners, special occasions, or when you just want something a little extra delicious.
Ingredients:
1 to 1.5 lb pork tenderloin
1 tbsp olive oil
8–10 slices of bacon
½ cup brown sugar (packed)
1 tsp garlic powder
½ tsp smoked paprika (optional, for a smoky kick)
½ tsp salt
¼ tsp black pepper
Instructions:
Preheat oven to 375°F (190°C). Line a baking sheet with foil and lightly grease it.
Mix dry rub: In a small bowl, combine brown sugar, garlic powder, paprika, salt, and pepper.
Sear the pork: In a skillet, heat olive oil over medium-high heat. Sear the pork tenderloin on all sides (2–3 minutes per side) until golden brown.
Wrap in bacon: Let the pork cool slightly, then rub the brown sugar mixture all over it. Wrap bacon slices around the tenderloin, overlapping slightly. Secure ends with toothpicks if needed.
Bake: Place the bacon-wrapped tenderloin on the prepared baking sheet. Bake for 25–30 minutes or until internal temp reaches 145°F (63°C).
Broil (optional): For crispier bacon, broil the tenderloin for 2–3 minutes at the end—watch closely!
Rest & slice: Let rest 5 minutes before slicing.
Note:
For best results, use a meat thermometer to avoid overcooking—pork is perfectly done at 145°F (63°C). Letting it rest before slicing helps retain all the juices. If your bacon isn’t crisping up, broil for 2–3 minutes at the end, keeping a close eye so it doesn’t burn.
