Looking for an easy, crowd-pleasing dish with minimal cleanup? This Crispy Potato and Bacon Sheet Pan is the perfect solution! Packed with golden roasted potatoes, crispy bacon, and savory seasoning, it’s a hearty, flavor-packed meal that works for breakfast, brunch, or even a quick dinner. Toss everything on one pan, pop it in the oven, and let it do all the work!

Ingredients:

  • 6–8 small to medium potatoes, diced (Yukon gold or red potatoes work great)

  • 6–8 slices of bacon, chopped

  • 1 small red onion, sliced (optional)

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika (optional)

  • Salt and pepper, to taste

  • Fresh parsley or green onions, chopped (for garnish)

Instructions:

  1. Preheat oven to 425°F (220°C).

  2. Prepare the pan: Line a sheet pan with parchment paper or lightly grease it.

  3. Mix ingredients: In a large bowl, toss the diced potatoes, olive oil, garlic powder, paprika, salt, and pepper.

  4. Spread on pan: Arrange the potatoes in a single layer on the sheet pan. Scatter the chopped bacon and sliced onions evenly over the top.

  5. Bake for 35–40 minutes, stirring once or twice, until the potatoes are golden and crispy and the bacon is cooked through.

  6. Garnish with chopped parsley or green onions before serving.

Optional Add-ons:

  • Crack a few eggs onto the pan during the last 8–10 minutes of baking for a one-pan breakfast.

  • Add shredded cheese in the last 5 minutes for a cheesy finish.

Note:
For extra crispiness, make sure the potatoes are spread out in a single layer with space between them—overcrowding the pan can cause them to steam instead of roast. You can also parboil the potatoes for 5 minutes before baking to speed up cooking and improve texture.
