There’s nothing like coming home to the comforting aroma of a slow-cooked pot roast. This Slow Cooker Pot Roast with Pinto Beans is a hearty, one-pot meal that’s full of flavor and simple to prepare. Tender beef, creamy pinto beans, and wholesome vegetables simmer together all day, creating a dish that’s perfect for family dinners or easy weeknight meals. Just set it and forget it—your slow cooker does all the work!

📝 Ingredients:

  • 3–4 lb beef chuck roast

  • Salt and pepper, to taste

  • 1 tbsp oil (for searing, optional)

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 2 cups cooked pinto beans (or 1 can, drained and rinsed)

  • 4 carrots, chopped

  • 3 potatoes, chopped

  • 2 cups beef broth

  • 1 tbsp tomato paste (optional for richer flavor)

  • 1 tsp paprika

  • 1 tsp dried thyme

  • 1 bay leaf

🍲 Instructions:

  1. (Optional) Sear the roast in oil over medium-high heat until browned on all sides. This adds flavor, but can be skipped if you’re in a hurry.

  2. Place roast in the slow cooker.

  3. Add onion, garlic, carrots, potatoes, and pinto beans around the roast.

  4. In a bowl, mix beef broth, tomato paste, paprika, thyme, salt, pepper, and pour over everything.

  5. Add bay leaf on top.

  6. Cover and cook:

    • Low for 8–10 hours

    • High for 4–6 hours

  7. Remove bay leaf. Shred meat and serve with broth and vegetables.
