📝 Ingredients:

  • 4 medium sweet potatoes

  • 1 cup shredded cheddar cheese (or cheese blend)

  • 6 slices bacon, cooked and crumbled

  • 2 tablespoons butter

  • 1/4 cup sour cream (optional)

  • 2 green onions, sliced

  • Salt & pepper, to taste

  • Aluminum foil

🍽️ Instructions:

  • Prep the Potatoes:

    • Wash and scrub the sweet potatoes well.

    • Prick each one a few times with a fork.

    • Wrap each potato in foil and place them in your slow cooker.

  • Cook:

    • Cover and cook on low for 6–7 hours or high for 3–4 hours, until tender.

  • Stuffing Time:

    • Once soft, carefully unwrap and slice each potato lengthwise.

    • Fluff the inside gently with a fork and add a small pat of butter.

    • Sprinkle in shredded cheese, crumbled bacon, and a little salt & pepper.

    • Let the cheese melt (you can close the lid again for a few minutes to help this along).

  • Serve:

    • Top with green onions and a dollop of sour cream, if desired.
