Ingredients:
1 lb ground beef
1 packet taco seasoning
1/2 cup water
6 flour tortillas (6-8 inch size)
1 can refried beans (warmed)
1 can (10 oz) red enchilada sauce
1/2 cup chopped onions (optional, like the original)
1 to 1 1/2 cups shredded cheddar or Mexican blend cheese
Black olives (optional topping)

Cook the beef:
In a skillet over medium heat, brown the ground beef. Drain excess grease, then stir in taco seasoning and water. Simmer until thickened (about 5 minutes).Warm the tortillas:
Microwave them in a damp paper towel for about 20 seconds, or heat in a pan until pliable.Assemble the enchiritos:
Spread a spoonful of refried beans down the center of each tortilla.
Add seasoned beef, some chopped onions (if using), and a sprinkle of cheese.
Roll them up like burritos.
Add sauce and cheese:
Place rolled tortillas in a baking dish.
Pour enchilada sauce over the top, then sprinkle with remaining cheese and more onions (optional).
Bake:
Bake at 350°F (175°C) for about 15-20 minutes, until hot and melty.Top and serve:
