Ingredients:
1 lb ground beef (or Italian sausage)
1 small onion, diced
2 cloves garlic, minced
1 (24 oz) jar pasta sauce
1 (14.5 oz) can diced tomatoes (undrained)
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
2 1/2 cups uncooked pasta (like rotini or penne)
1 cup cottage cheese or ricotta cheese
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Instructions:
Cook the beef: In a skillet over medium heat, cook the ground beef with onion until browned. Drain excess grease. Stir in garlic and cook for 1 more minute.
Add to slow cooker: Transfer meat mixture to the slow cooker. Add pasta sauce, diced tomatoes, Italian seasoning, salt, and pepper. Stir well.
Add pasta: Stir in uncooked pasta. Make sure the pasta is mostly submerged in the sauce.
Slow cook: Cover and cook on low for 3 to 4 hours, or until pasta is tender. Stir once halfway through if you can.
