There’s something comforting about a warm, cheesy quiche fresh out of the oven. This Three Cheese Quiche brings together cheddar, mozzarella, and feta for a rich and flavorful bite in every slice. Perfect for brunch, lunch, or even a light dinner, it’s easy to make and even easier to love!
Ingredients:
1 (9-inch) pie crust (store-bought or homemade)
4 large eggs
1 cup half-and-half (or whole milk)
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup crumbled feta (or goat cheese if you prefer)
1/4 cup chopped green onions (optional)
Salt and pepper to taste
Pinch of nutmeg (optional but great for flavor)
Instructions:
Preheat oven to 375°F (190°C). Place the pie crust in a pie dish and crimp the edges. Poke the bottom with a fork.
Blind bake crust (optional for crispiness): Line the crust with parchment paper and add pie weights or dry beans. Bake for 10 minutes, then remove weights and bake for 5 more minutes.
Whisk eggs & dairy in a bowl. Add salt, pepper, and nutmeg.
Add cheeses & onions to the crust. Pour egg mixture over the top.
Bake for 35–40 minutes, or until the center is set and the top is golden.
Cool slightly before slicing. Enjoy warm or at room temp!
Note:
Feel free to swap out the cheeses based on what you have on hand — Swiss, gouda, or even pepper jack can be great substitutes. You can also add in extras like cooked bacon, sautéed spinach, or mushrooms for more flavor and texture. Quiche is very forgiving, so make it your own!
