Ingredients:

  • 2 cups cooked rice (preferably day-old rice)

  • 1/2 cup diced ham

  • 1/2 cup pineapple chunks (fresh or canned, drained)

  • 1/4 cup frozen peas and carrots

  • 2 eggs, beaten

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 2 cloves garlic, minced

  • 1/4 cup green onions, chopped

  • Salt and pepper, to taste

Instructions:

  1. Prepare the rice: If you’re using freshly cooked rice, spread it out on a baking sheet to cool for about 10-15 minutes to avoid it being too sticky.

  2. Scramble the eggs: In a large pan or wok, heat 1 tablespoon of sesame oil over medium heat. Pour in the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.

  3. Cook the vegetables: In the same pan, add the remaining sesame oil. Sauté garlic, peas, and carrots for 2-3 minutes until softened.

  4. Add the rice and ham: Add the rice to the pan, breaking up any clumps. Stir in the diced ham and pineapple chunks. Cook for another 2-3 minutes until everything is heated through.

  5. Season: Add soy sauce, and stir well to combine. Taste and adjust the seasoning with salt and pepper.

  6. Finish: Stir in the scrambled eggs and green onions. Give everything one final mix.

  7. Serve: Enjoy your Hawaiian Fried Rice hot, and optionally garnish with extra green onions or a drizzle of soy sauce!
