Ingredients:

  • 2 boneless, skinless chicken breasts (halved into cutlets)

  • ½ cup all-purpose flour

  • 2 large eggs

  • ¼ cup milk

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • ½ cup chicken broth

  • ½ cup dry white wine (optional, or use more broth)

  • ¼ cup fresh lemon juice (about 2 lemons)

  • 1 tablespoon fresh parsley (chopped)

Instructions:

  1. Prep the Chicken – Pound the chicken cutlets slightly for even thickness. Season with salt and pepper.

  2. Dredge – Place flour in a shallow dish. In another dish, whisk eggs with milk. Dredge each cutlet in flour, then dip into the egg mixture.

  3. Cook – Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Cook chicken for 3–4 minutes per side until golden brown. Remove and set aside.

  4. Make the Sauce – In the same skillet, add wine (or broth), chicken broth, and lemon juice. Simmer for 2 minutes.

  5. Finish – Add remaining butter, return chicken to the pan, and simmer for 2 minutes. Sprinkle with parsley.
