Ingredients:

  • 1 lb breakfast sausage (crumbled)

  • 2 cups pancake mix

  • 1 cup milk

  • 2 eggs

  • 1 tsp vanilla extract (optional)

  • ½ tsp cinnamon (optional)

  • ½ cup maple syrup (plus more for serving)

  • 1 cup shredded cheese (optional, for a savory twist)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Cook sausage in a skillet over medium heat until browned. Drain excess grease.

  3. Mix batter: In a bowl, whisk together pancake mix, milk, eggs, vanilla, and cinnamon. Stir in ½ cup maple syrup.

  4. Assemble: Pour half of the batter into the baking dish. Sprinkle cooked sausage over the batter. (Add cheese if using.) Pour the rest of the batter on top.

  5. Bake for 20-25 minutes or until golden brown and set in the middle.

  6. Serve warm with extra maple syrup!
