Ingredients:
2 cups cooked chicken, shredded
½ cup dill pickles, finely chopped
½ cup shredded cheese (cheddar or mozzarella)
1 egg
¼ cup mayonnaise
¼ cup almond flour (or breadcrumbs)
1 tsp garlic powder
½ tsp onion powder
½ tsp salt
½ tsp black pepper
1 tbsp fresh dill, chopped (or 1 tsp dried dill)
1 tbsp pickle juice
Oil for frying
Instructions:
In a bowl, mix together the shredded chicken, chopped pickles, cheese, egg, mayo, flour, garlic powder, onion powder, salt, pepper, dill, and pickle juice.
Heat oil in a skillet over medium heat.
Scoop out small portions of the mixture and flatten them into patties.
Fry for about 3-4 minutes per side until golden brown and crispy.
Remove and place on a paper towel to drain excess oil.
Serve hot with ranch dressing or a dill pickle dipping sauce!
Note:
For a gluten-free version of these fritters, you can substitute the almond flour with breadcrumbs or gluten-free breadcrumbs. Adjust the texture with a little extra mayo if the mixture seems too dry. You can also experiment with adding a bit of hot sauce or cayenne pepper if you like a spicy kick!
