Ingredients:

  • 2 cups cooked chicken, shredded

  • ½ cup dill pickles, finely chopped

  • ½ cup shredded cheese (cheddar or mozzarella)

  • 1 egg

  • ¼ cup mayonnaise

  • ¼ cup almond flour (or breadcrumbs)

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)

  • 1 tbsp pickle juice

  • Oil for frying

Instructions:

  1. In a bowl, mix together the shredded chicken, chopped pickles, cheese, egg, mayo, flour, garlic powder, onion powder, salt, pepper, dill, and pickle juice.

  2. Heat oil in a skillet over medium heat.

  3. Scoop out small portions of the mixture and flatten them into patties.

  4. Fry for about 3-4 minutes per side until golden brown and crispy.

  5. Remove and place on a paper towel to drain excess oil.

  6. Serve hot with ranch dressing or a dill pickle dipping sauce!

Note:
For a gluten-free version of these fritters, you can substitute the almond flour with breadcrumbs or gluten-free breadcrumbs. Adjust the texture with a little extra mayo if the mixture seems too dry. You can also experiment with adding a bit of hot sauce or cayenne pepper if you like a spicy kick!
