Caramel Chocolate Crunch Bars

Ingredients
Crunch Layer:
- 3 cups crispy rice cereal
- 1 cup crushed pretzels (optional for extra texture)
- 1/2 cup melted butter
- 1/2 cup brown sugar
- 1/4 cup light corn syrup
- 1/2 teaspoon vanilla extract
Caramel Layer:
- 1 cup caramel candies (or homemade caramel)
- 2 tablespoons heavy cream
Chocolate Layer:
- 1 1/2 cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or butter
Instructions
Step 1: Prepare the Crunch Base
- Line a square 8×8-inch or 9×9-inch pan with parchment paper.
- In a saucepan over medium heat, melt the butter, brown sugar, and corn syrup, stirring continuously until well combined. Let the mixture boil gently for about 2 minutes.
- Remove from heat and mix in the vanilla extract.
- Pour this mixture over the crispy rice cereal and crushed pretzels, ensuring even coating.
- Press the mixture into the lined pan and set aside to cool.
Step 2: Make the Caramel Layer
- In a microwave-safe bowl, heat the caramel candies and heavy cream in 20-second intervals, stirring in between until smooth and fully melted.
- Spread the caramel evenly over the cooled crunch layer and let it sit for 10–15 minutes to firm up.
Step 3: Add the Chocolate Topping
- Microwave the chocolate chips with coconut oil (or butter) in short bursts, stirring until completely melted and silky.
- Pour the melted chocolate over the caramel layer, smoothing it out evenly.
- Allow the bars to set at room temperature or place them in the refrigerator for about 30 minutes until firm.

- Once the chocolate has hardened, cut the mixture into bars.
