Ingredients:
- 1 lb ground beef (or diced beef)
- 1 can (15 oz) pinto beans, drained and rinsed (or 2 cups cooked beans)
- 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
- 1 cup green chiles, chopped (fresh or canned)
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp smoked paprika
- Salt & pepper to taste
- 1 tbsp olive oil
- ½ cup corn (optional)
- Fresh cilantro & lime wedges for garnish (optional)
Instructions:
1️⃣ In a large pot, heat olive oil over medium heat. Brown the ground beef, breaking it up as it cooks. Drain excess fat if needed.
2️⃣ Add onion and garlic, sauté until soft and fragrant (about 3 min).
3️⃣ Stir in green chiles, diced tomatoes, pinto beans, and spices. Mix well.
4️⃣ Pour in beef broth, bring to a boil, then reduce heat and let simmer for 45-60 min (or until flavors meld).
5️⃣ Optional: Add corn in the last 10 min of cooking.
