For an 8-inch (20 cm) round cake pan:
- 250g (9 oz) cream cheese, softened
- 50g (3.5 tbsp) unsalted butter
- 100ml (⅓ cup + 1 tbsp) milk
- 6 large eggs, separated
- 100g (½ cup) granulated sugar
- 60g (½ cup) cake flour (or all-purpose flour sifted with cornstarch)
- 20g (2 tbsp) cornstarch
- 1 tsp vanilla extract
- 1 tsp lemon juice (optional, for extra tang)
- ¼ tsp salt
Instructions
Step 1: Prepare the Pan
- Preheat your oven to 150°C (300°F).
- Line the bottom of the cake pan with parchment paper. Wrap the outside with aluminum foil to prevent water from seeping in during the baking process.
- Prepare a water bath by placing a large baking dish in the oven and filling it with hot water.
Step 2: Melt Cheese Mixture
- In a heatproof bowl, melt cream cheese, butter, and milk over a double boiler (or microwave in short bursts). Stir until smooth.
