Ingredients:

  • 2 lb pork loin
  • 1 can (20 oz) pineapple chunks (with juice)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch (optional, for thickening)

Instructions:

  1. Place the pork loin in the slow cooker.
  2. In a bowl, mix pineapple chunks (with juice), soy sauce, brown sugar, garlic, ginger, and black pepper.
  3. Pour the mixture over the pork.
  4. Cook on low for 6-8 hours or high for 3-4 hours, until the pork is tender.
  5. (Optional) Remove the pork, mix cornstarch with a little water, and stir into the sauce to thicken.
  6. Slice the pork, spoon the pineapple sauce over it, and serve!
