Ingredients:
- 1 lb ground beef or turkey
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 can (14.5 oz) black beans, rinsed and drained
- 2can (14.5 oz) kidney beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) red enchilada sauce
- 1 can (4 oz) diced green chilies
- 2 cups beef or chicken broth
- 1 tbsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- Salt and black pepper, to taste
- 1 ½ cups shredded cheddar cheese or Mexican cheese blend
- ½ cup sour cream (optional, for extra creaminess)
- Fresh cilantro, chopped (for garnish)
Instructions:
Brown the Meat:
- Heat a large pot or Dutch oven over medium heat and cook the ground beef until fully browned. Drain excess grease.
Sauté the Aromatics:
- Add the diced onion and minced garlic, cooking for 2–3 minutes until softened and fragrant.
Incorporate Beans & Vegetables:
